Homemade Chorizo Sausage

I know, I know!! It's so unhealthy! It's really not, that's why I'm sharing this homemade recipe. The store bought stuff, full of grease and yucky "things" is not, but this way you can control what ingredients you use. I could live on chorizo! I love it in burritos, omelettes, soups, it's all good! Give it a try.

Homemade Chorizo Sausage

1 pound ground pork
1 Tablespoon coarse (kosher) salt
1 Tablespoon minced garlic
1-1/2 Tablespoons chili powder
1-1/2 Tablespoons ground cumin
1/2 cup cider vinegar
Making your own homemade chorizo at home can be fun and easy. Don’t be intimidated it’s not as difficult as it might sound. All you need to do is just follow this simple recipe.
Mix all of your seasonings together. Add the seasonings to the ground pork along with the cider vinegar and mix well. After your sausage is mixed together it’s time to stuff your chorizo into casings. For homemade chorizo I recommend that you use natural hog casings. Once you finish stuffing your homemade chorizo you can either cook it as is for fresh chorizo or you can smoke it for smoked chorizo. All you need to do now is enjoy you homemade chorizo.
